The Legend of The Buffalo Wing

The History of the Buffalo Wing! According to the book "Third Helpings" by Calvin Trillin, there are three stories about the creation of the Buffalo Wing.

All three stories take place in Buffalo, NY, which is why they are called Buffalo Wings and not Baltimore wings. The Real Story follows after reading the legends below.

  1. In 1964, Buffalo's Anchor bar received a shipment of chicken wings by mistake. Cook Teressa Bellisimo needed to do something with them, so she cut off the useless wing tip and chopped the remainder in half so that they were in straight sections and easier to eat. Then she deep-fried them, covered them with a homemade hot sauce and borrowed some celery from the bar's regular antipasto. Then she arranged them on a plate with some of the Anchor's house dressing, which, fatefully, was bleu cheese. This improvised bar snack became an immediate hit.

  2. This story also takes place at the Anchor Bar, but in this story, it was a Friday night, when Catholics were still staying away from meat on Fridays. The bartender asked his mom, Teressa Bellisimo, to make something special and meaty to pass around at the stroke of midnight. The patrons loved her impromptu dish, and the wing took flight.

  3. In the third story, the chicken wing had long been part of the city's black culture when a cook named John Young invented the Buffalo Wing as we know it by covering it with what he called his "mambo" sauce."

The Real Story
As Told By Dom Bellissimo of The Anchor Bar

"One Friday night back in 1964, I was working behind the bar. It was very busy that night. My mother, Teressa, was in the kitchen cooking and father, Frank, was greeting customers. It was one of those good Friday nights.

At about 11:30 P.M. a group of my friends came through the door and they were starving! I told them to wait until midnight so they could have what they wanted to eat. I served another round of drinks. By midnight, they were really hungry. I asked my mother to fix something for them.

About ten minutes later she brought out two plates and set them on the bar. Everyone asked, "What is this?" And to tell you the truth, I was curious as well! They looked like chicken wings, but I was afraid to say so!

To make a long story short - yes, they were chicken wings.

The rest is history. My mother Teressa created the famous chicken wing now served all over the country. Wherever you go and mention Buffalo Chicken Wings, you will now remember about my mother Teressa and that famous night in Buffalo.

The Anchor Bar in Buffalo, New York is the undisputed home of the Buffalo Chicken Wing. Frank & Teressa's Original Anchor Bar Buffalo Wings have taken the humble chicken wing from local reviews to national acclaim.

By 1995, Buffalo Wings were a 400 million dollar part of the American restaurant industry.

Commonly referred to as Buffalo Wings, We simply call them delicious. These spicy little morsels of poultry are now served around the world.

Today Buffalo Wings are served in smokey bars, classy cafes, bustling bistros and ritzy restaurants everywhere. It is the most imitated food item to get around. The Anchor Bar has been the favored stop in Buffalo for visiting celebrities and dignitaries, from football greats, musicians, political giants from the White House, and even foreign diplomats. The interior of the cozy Anchor Bar is filled with awards, celebrity pictures, national comic strips, newspaper articles, and proclamations about the famous Buffalo Wings.


The Misconception

The Buffalo Wing is sold in many forms, however one should understand what the Buffalo Wing is so it can be enjoyed and savored in its true form.

Buffalo Wings are plain naked wings, they are not breaded. The wings used for Buffalo Wings are large meaty wings which appear as small drumsticks. The small skinny wings that look like pigeon wings should be rejected as a Buffalo Wing.

The large wings are sectioned for easy eating, dropped into hot oil and deep fried. When done the wings are removed and allowed to drain completely of oil. The wings are then placed in and tossed in the hot sauce. After a few moments they are removed and are allowed to drain off the excess sauce. Buffalo Wings are served with celery sticks and chunky bleu cheese sauce.


Buffalo Wings at Home

Buffalo Wings are easy to make. I like to use a prepared wing sauce in a ready to use form due to convenience. Two of my favorites are;

Buffalo Wings Recipe

2 1/2 lb. fresh chicken wings 12-16 whole wings
1/2 cup chicken wing Sauce
1/4 cup melted butter or margarine

Split wings at joint, pat dry.

Melt margarine or butter in microwave bowl or small saucepan, add wing sauce and bring to light boil, remove from heat.

Deep fry wings at 350 degrees for 10-12 minutes, or
bake wings at 425 degrees for 45 minutes
until completely cooked and crispy; then allow to drain.

Put in cooked wings into sauce and toss until wings are completely covered. Remove wings from sauce and let drain a moment to remove excess. Serve with bleu cheese and celery. For a milder wing add additional margarine or butter.

If these prepared sauces are not available you can substitute 8 tablespoons hot sauce,1 tablespoon white vinegar, and 1/2 teaspoon black pepper. Mix these with the melted 1/4 cup of margarine as described in the recipe above.

Wings and prepared sauces are now available in many flavors, original, barbecue, honey mustard, teriyaki, and sweet and sour. I am sure more will be added to this list as the Buffalo Wing craze continues.

  • The Anchor Bar has been the favored stop of visitors and celebrities alike: from actor John Candy, to musicians Kenny Rogers, Bob Seger, Spyro Gyra, Glen Miller's Band member Dick Gerhart, and most sports figures: favorite spot of Fred Smerlas and Alexander Mogilny.

  • The walls of the Anchor Bar are filled with awards, comic strips, and proclamations about Buffalo's Famous Chicken Wings.

  • Opposing athletic teams that come to Buffalo visit the Anchor Bar the night before their game.

  • Vice President Mondale had chicken wings delivered to his plane on a visit to Buffalo, as did the former First Lady, Hillary Clinton.

  • Tommy Lasorda, Coach of the LA Dodgers, said the Anchor Bar has the Best Wings he's ever tasted.

  • In 1977, Buffalo Mayor Stan Makowski, proclaimed July 29th as Official Chicken Wing Day.

  • Anchor Bar Chicken Wings were proclaimed a winner in the Jan. '96 essay contest of "WHY I LOVE Western New York."

  • Wings cost $.05/lb, in 1964.

  • Chicken wings in Buffalo are always served with cut celery and Bleu Cheese.
